					<description><![CDATA[Our supermarket always carries rabbit.  Dressed and cleaned and ready to be cut into bite size pieces.  After reading your great essay, we decided that we will have rabbit Gumbo this weekend with shrimp and sausage.  We have tried alligator Gumbo but it sorta gets lost in all the other flavors and nobody knows it is in there and it is very expensive, even down here.  Will stick to fried gator tail.  We like our Gumbo thin, so we make a nice (Hershey&#039;s Chocolate Bar) color.  File Powder is added just before serving for flavor and never understood how that could be a thickening agent? Okra gets it plenty thick for us.

 I&#039;ve been wanting to make my own ever since.

I&#039;ve even had several whole rabbits, raised by my parents, to give a good start to the gumbo, but other than using Zatarain&#039;s gumbo boxed mix, for something that&#039;s the equivalent of mac and cheese out of the blue Kraft mac and cheese box, I haven&#039;t made the attempt. One day, though, with okra or maybe even file powder as I&#039;m pretty sure I&#039;ve seen it up here in southwestern Ontario. That&#039;s in Canada, by the way. :)]]></description>
